Rushad Ginwala
Founder
India's hospitality and restaurant industry has emerged as one of the country's most dynamic and fast-growing sectors, driven by rising consumer aspirations, evolving dining preferences, increasing urbanization, and the growing demand for experiential dining. Today's customers seek more than just good food - they value memorable experiences, authentic storytelling, and unique ambience.
As competition intensifies, effective leadership has become a critical factor in building sustainable hospitality brands. Visionary leaders play a pivotal role in identifying market opportunities, adapting to changing consumer expectations, fostering innovation, and creating customer-centric experiences that stand the test of time.
Among the distinguished leaders shaping India's hospitality landscape is Rushad Ginwala, Founder of Mirch Masala, a brand that has successfully redefined the traditional dhaba dining experience for modern consumers.
With nearly five decades of industry experience, Ginwala's journey began after graduating from Bombay Catering College in 1976. He started his career with the Taj Group as a Management Trainee at the iconic Taj Mahal Palace, Mumbai, where he gained invaluable insights into the fundamentals of hospitality management.
Seeking broader industry exposure, he later joined the Senator Group, one of India's most respected hospitality management organizations. During his tenure, he played a key role in revamping and repositioning Asia's first revolving restaurant in Ahmedabad and introduced several pioneering concepts, including the city's first pastry shop, Pastry Wagon, a Dum Pukht restaurant, and an Indian specialty dining outlet.
My leadership philosophy is anchored in two fundamental values: happiness & trust
A defining moment in his entrepreneurial journey came when he organized a dhaba-themed food festival that received an overwhelming response from diners. Recognizing the appeal of authentic, rustic Indian dining experiences, he launched Mirch Masala nearly three decades ago.
By blending the traditional charm of a roadside dhaba with Bollywood-inspired artwork, antique collectibles, vintage movie posters, and nostalgic memorabilia, Ginwala created a distinctive hospitality brand that continues to delight generations of customers across India. Let’s dive into this one on one interaction to know more.
Mirch Masala has successfully blended tradition with innovation over the years. How do you ensure the brand remains relevant to changing consumer preferences while preserving its original identity?
For me, the key is evolution without losing authenticity. Since the day we launched Mirch Masala, certain signature offerings such as our chaats, dum biryanis, North Indian specialties, masala chaas, and lassis have remained unchanged because they represent the heart of our brand. These dishes have been enjoyed by generations of guests and continue to be our strongest connection with customers.
At the same time, I believe innovation is essential in today's dynamic market. Our culinary team regularly introduces seasonal menus, special promotions, innovative kebabs, seafood dishes, tandoori creations, and refreshing mocktails to appeal to younger diners.
By combining timeless favorites with contemporary offerings, we create an experience that feels both familiar and exciting, ensuring guests always find something new while enjoying the traditions they love.
In an increasingly competitive and experience-driven hospitality landscape, what strategies have enabled Mirch Masala to build lasting customer loyalty and a strong market presence?
I have always believed that people do not visit restaurants only for food; they come for experiences and memories. At Mirch Masala, every outlet is designed to offer something unique through antique collections, vintage radios, gramophones, Bollywood posters, old signboards, rickshaws, trucks, and nostalgic memorabilia that create a distinctive atmosphere. These elements encourage interaction, storytelling, and social sharing.
What gives me the greatest satisfaction is seeing multiple generations of families dining with us. Many customers who visited us years ago now bring their children and grandchildren.
Beyond ambience, we continuously engage with our guests through seasonal festivals, special menus, loyalty initiatives, digital campaigns, and customer feedback. Building strong emotional connections has helped us create loyalty that extends far beyond a single dining experience.
How is Mirch Masala adapting to the digital transformation of the restaurant industry and the evolving expectations of modern consumers?
I believe brands must embrace change while retaining their core values. We actively invest in social media campaigns, digital marketing, customer engagement initiatives, and targeted communication strategies that help us stay connected with our audience.
Younger members of our team bring valuable perspectives on emerging trends and technologies, helping us remain relevant in a fast-changing environment. Internally, we have adopted advanced systems for supply chain management, inventory monitoring, and operational control.
We are also exploring AI-driven solutions that can improve workforce management and enhance guest experiences. My approach is simple: combine the trust and credibility of a legacy brand with modern technology that meets the expectations of today's consumers.
What leadership principles have guided you in building strong teams and fostering a culture of excellence across the Mirch Masala network?
My leadership philosophy revolves around teamwork, empowerment, trust, and continuous learning. I am fortunate to have several team members who have been associated with the organization for many years, bringing valuable experience and stability.
At the same time, I actively encourage younger professionals to contribute fresh ideas and challenge conventional thinking. I genuinely enjoy working with younger talent because they bring energy, innovation, and expertise in areas such as technology, digital marketing, artificial intelligence, and customer engagement.
I believe successful organizations are built when experienced professionals and emerging leaders work together toward a common vision. Creating an environment where people feel respected, valued, and encouraged to grow has been instrumental in building a motivated team that consistently delivers exceptional customer experiences.
As Mirch Masala expands beyond India, what opportunities do you see for Indian hospitality brands on the global stage?
Indian cuisine enjoys tremendous recognition and appreciation across the world, creating exciting opportunities for hospitality brands to expand internationally. What gives me confidence is that Mirch Masala offers much more than food. We provide a complete cultural experience through our ambience, décor, Bollywood-inspired storytelling, and nostalgic elements that reflect India's rich heritage.
Over the years, we have developed standardized systems that make international expansion more practical and scalable. We are actively evaluating opportunities in markets such as the United States, Canada, Japan, and other regions where there is growing demand for authentic Indian dining experiences.
I believe global consumers are increasingly seeking immersive experiences, and Indian hospitality brands have a unique opportunity to showcase not only cuisine but also culture, tradition, and memorable storytelling.
What is your long-term vision for Mirch Masala, and how do you hope to redefine Indian dining experiences in India and abroad?
My vision is to establish Mirch Masala as a globally recognized Indian hospitality brand while remaining deeply rooted in the values and traditions that define us. Within India, I see enormous growth potential in Tier-II, Tier-III, and emerging cities where consumer aspirations and spending power are rising rapidly.
Our recent success in smaller markets has reinforced my belief that quality dining experiences are no longer limited to metropolitan cities. Internationally, I want Mirch Masala to become a platform for sharing the warmth, vibrancy, and authenticity of Indian hospitality with global audiences.
Ultimately, I want our restaurants to be places where people create memories, celebrate relationships, and experience India's culture. For me, hospitality is not just about serving food; it is about creating meaningful and lasting experiences.
